A deliciously cheesy casserole with beef, bacon, and rice, perfect for a family meal.

- 1 lb (450g) ground beef
- 6 slices bacon, cooked and crumbled
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- 1 cup beef broth
- 1 onion, chopped
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp smoked paprika
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cook the Bacon: In a skillet over medium heat, cook the bacon until crispy. Remove and crumble once cooled.
- Cook the Beef: In the same skillet, add olive oil and sauté the chopped onion and garlic until translucent. Add the ground beef, salt, pepper, and smoked paprika. Cook until the beef is browned.
- Prepare the Mixture: Add diced bell pepper to the beef mixture and cook for another 3-4 minutes. Stir in the beef broth and cooked rice. Mix until all ingredients are well combined.
- Assemble the Casserole: In a baking dish, spread half the beef and rice mixture. Sprinkle half the crumbled bacon and half the cheddar cheese over the mixture. Add the remaining beef and rice mixture, then top with the remaining cheese and bacon.
- Bake: Place in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and golden.
- Garnish and Serve: Remove from the oven and let it cool slightly. Garnish with chopped parsley before serving.
Notes
- For extra flavor, try adding a dash of Worcestershire sauce to the beef mixture.
- You can substitute cheddar with your favorite cheese blend for a different taste.
- For a spicier version, add chopped jalapeños or a sprinkle of cayenne pepper.
