- 8 slices bacon
- 2 cups cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup sour cream
- 1/2 cup milk
- 3 tablespoons butter

- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh chives for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Potatoes: Peel and cut potatoes into bite-sized pieces. Boil them in salted water until tender but firm. Drain and set aside.
- Cook Bacon: In a pan, cook the bacon until crispy. Remove from the pan and place on paper towels to absorb excess grease. Crumble when cool.
- Make Cheese Sauce: In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in milk and sour cream, heating gently. Gradually add cheddar and mozzarella cheeses, stirring until melted and smooth. Season with salt and pepper.
- Assemble Dish: In a lightly greased baking dish, layer half of the potatoes, pour half of the cheese sauce over them, and add half of the crumbled bacon. Repeat with the remaining potatoes, cheese sauce, and bacon.
- Bake: Place the dish in the preheated oven and bake for 20-25 minutes until the top is golden and bubbly.
- Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh chives before serving.
