Ingredients

  • 1 pound ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon taco seasoning
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Cook the Beef:
    • Heat olive oil in a large skillet over medium heat.
    • Add diced onion and cook until translucent, about 3-4 minutes.
    • Stir in minced garlic and cook for another minute.
    • Add ground beef and cook until browned, breaking it apart with a spatula.
    • Drain excess fat and mix in taco seasoning, salt, and pepper.
  2. Prepare the Filling:
    • Once the beef is seasoned, remove from heat.
    • Mix in half of the cheddar cheese and Monterey Jack cheese.
    • Stir in cilantro, and allow the cheese to melt.
  3. Assemble the Burritos:
    • Lay a tortilla flat and spread 2 tablespoons of sour cream in the center.
    • Spoon a portion of the beef mixture onto the tortilla.
    • Sprinkle more cheese on top of the beef mixture.
    • Fold the sides of the tortilla, roll it up tightly, and place seam-side down.
  4. Grill the Burritos:
    • Heat a clean skillet or griddle over medium heat.
    • Place the burrito seam-side down and grill until the tortilla is golden and crispy.
    • Flip and grill the other side until it’s crispy as well.
