- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Cook the Beef:
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for another minute.
- Add ground beef and cook until browned, breaking it apart with a spatula.
- Drain excess fat and mix in taco seasoning, salt, and pepper.
- Prepare the Filling:
- Once the beef is seasoned, remove from heat.
- Mix in half of the cheddar cheese and Monterey Jack cheese.
- Stir in cilantro, and allow the cheese to melt.
- Assemble the Burritos:
- Lay a tortilla flat and spread 2 tablespoons of sour cream in the center.
- Spoon a portion of the beef mixture onto the tortilla.
- Sprinkle more cheese on top of the beef mixture.
- Fold the sides of the tortilla, roll it up tightly, and place seam-side down.
- Grill the Burritos:
- Heat a clean skillet or griddle over medium heat.
- Place the burrito seam-side down and grill until the tortilla is golden and crispy.
- Flip and grill the other side until it’s crispy as well.
