Description

This cheesy green chile casserole is packed with flavor and perfect for any meal of the day!


Ingredients

  • 30 ounces mild green chiles
  • 1 pound pepper jack cheese
  • 1 pound cheddar colby jack cheese
  • 57 large eggs
  • 1 1/4 cups whole milk
  • 1 teaspoon coarse salt
  • 1 teaspoon powdered dry mustard
  • 1/4 cup flour
  • cooking spray for the baking dish

Instructions

  1. Preheat the oven to 350°F. Prepare a 9×13 baking dish by spraying it generously with cooking spray.
  2. Stuff the whole chiles with pepper jack cheese, or spread diced chiles evenly in the dish. Layer half the shredded cheddar colby jack cheese over the chiles.
  3. Whisk the eggs, whole milk, coarse salt, and dry mustard in a mixing bowl until smooth and well combined.
  4. Combine a portion of the egg mixture with the flour to create a paste, and then mix it back into the main egg mixture.
  5. Pour the egg mixture evenly over the chiles and cheese layers in the baking dish.
  6. Bake uncovered for 40 minutes, then sprinkle remaining cheese on top and bake for an additional 5 minutes.
  7. Cool the casserole for 5 minutes before serving.
