This cheesy green chile casserole is packed with flavor and perfect for any meal of the day!

- 30 ounces mild green chiles
- 1 pound pepper jack cheese
- 1 pound cheddar colby jack cheese
- 5–7 large eggs
- 1 1/4 cups whole milk
- 1 teaspoon coarse salt
- 1 teaspoon powdered dry mustard
- 1/4 cup flour
- cooking spray for the baking dish
Instructions
- Preheat the oven to 350°F. Prepare a 9×13 baking dish by spraying it generously with cooking spray.
- Stuff the whole chiles with pepper jack cheese, or spread diced chiles evenly in the dish. Layer half the shredded cheddar colby jack cheese over the chiles.
- Whisk the eggs, whole milk, coarse salt, and dry mustard in a mixing bowl until smooth and well combined.
- Combine a portion of the egg mixture with the flour to create a paste, and then mix it back into the main egg mixture.
- Pour the egg mixture evenly over the chiles and cheese layers in the baking dish.
- Bake uncovered for 40 minutes, then sprinkle remaining cheese on top and bake for an additional 5 minutes.
- Cool the casserole for 5 minutes before serving.
Notes
- Feel free to use whole chiles or diced for easier distribution.
- Freshly shredded cheese melts better for a gooey texture.
- Almond milk can be used for a dairy-free alternative.
- Adjust the salt according to your taste preferences.
- Omit powdered dry mustard if you don’t have it on hand.
