Description

A delicious twist on traditional meatloaf with cheesy macaroni layered in.

Ingredients

Scale
  • 1.5 lbs ground beef
  • 2 cups elbow macaroni, cooked
  • 2 cups cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1 cup bread crumbs
  • 1.5 cups milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • to taste salt
  • to taste black pepper
  • 1 teaspoon Italian seasoning
  • for garnish fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Meatloaf Mixture: In a large bowl, combine ground beef, chopped onion, minced garlic, egg, bread crumbs, Italian seasoning, salt, and black pepper. Mix well.
  3. Make Cheese Sauce: In a saucepan, melt butter over medium heat. Add flour and whisk until smooth. Gradually add milk, whisking constantly, until the sauce thickens. Stir in cheddar and mozzarella cheese, and continue stirring until melted and smooth.
  4. Combine Macaroni and Cheese: In a separate bowl, combine cooked macaroni with the cheese sauce, mixing thoroughly.
  5. Assemble Layers: In a greased baking dish, layer half of the macaroni and cheese mixture. Add a layer of the meatloaf mixture, pressing it down evenly. Top with the remaining macaroni and cheese.
  6. Bake the Dish: Bake in the preheated oven for 45-50 minutes, until the top is golden brown and bubbly.
  7. Garnish and Serve: Allow the bake to cool slightly before garnishing with freshly chopped parsley. Serve warm.

Notes

  • For extra flavor, add a dash of Worcestershire sauce to the meatloaf mixture.
  • Ensure the cheese sauce is smooth before adding to macaroni for a creamier texture.
  • Cover the bake with foil for the first 30 minutes of cooking to prevent over-browning. Remove the foil for the last 10-15 minutes to achieve a crispy top.
