Description
A comforting and creamy chicken soup loaded with wild rice and fresh vegetables.
Ingredients

- 1 lb chicken breast, diced
- 1 cup wild rice
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- In a large pot, sauté onion, carrots, and celery until soft.
- Add garlic and thyme, cook for 1 minute.
- Add chicken and cook until browned.
- Stir in wild rice and chicken broth.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Stir in heavy cream and season with salt and pepper.
- Serve hot.
Notes
- This soup can be refrigerated for up to 3 days.
- For a thicker soup, you can blend some of it and stir back in.
