Description

A comforting and creamy chicken soup loaded with wild rice and fresh vegetables.


Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 cup wild rice
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until soft.
  2. Add garlic and thyme, cook for 1 minute.
  3. Add chicken and cook until browned.
  4. Stir in wild rice and chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Stir in heavy cream and season with salt and pepper.
  7. Serve hot.

  • This soup can be refrigerated for up to 3 days.
  • For a thicker soup, you can blend some of it and stir back in.
