Instructions
- Prepare the Cupcakes:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, followed by the vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with dry ingredients.
- Divide the batter evenly among the cupcake liners.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool completely on a wire rack.
- Make the Chocolate Ganache:
- Heat the heavy cream in a small saucepan over medium heat until it begins to simmer.
- Remove from heat and pour over chocolate chips in a heatproof bowl.
- Let sit for 5 minutes, then whisk until smooth and glossy.
- Assemble the Acorns:
- Dip the top of each cooled cupcake into the ganache, letting excess drip off.
- While the ganache is still wet, insert a mini pretzel stick into the center as the acorn stem.
- Optionally, add chocolate sprinkles on the ganache dipped part for texture.
- Decorate:
- Pipe a small swirl of frosting on top if desired, or leave simple with chocolate sprinkles.
