Description
Delicious chorizo breakfast burritos filled with scrambled eggs and cheese.
Ingredients

- 1 cup chorizo (1/6 lb. was used per batch)
- 3 large eggs
- 1 pinch salt (to taste)
- 3 large tortillas
- 3/4 cup cheese (optional, shredded)
Instructions
- Grease a small skillet with nonstick cooking spray. Add chorizo to the skillet, break up into small pieces and cook over medium heat, for about 5 minutes.
- Push sausage to the outside of the skillet. Beat together eggs in a bowl and add a pinch of salt. Pour eggs into the center of the skillet and heat for 2-3 minutes, scrambling eggs until cooked. Remove from heat.
- Divide egg and sausage mixture into thirds. Add one third of the mixture to the center of a warm tortilla. Top with cheese and salsa and roll tightly into a burrito. Repeat until you have 3 burritos.

- You can customize the burritos with your favorite toppings like salsa or avocado.
