Ingredients
Scale
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/3 cup water
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup confectioners’ sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 cup granulated sugar
- 1 tablespoon cinnamon
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper.
- Prepare the Batter: In a bowl, whisk together flour, baking powder, and salt. In a separate bowl, beat eggs until thick and pale. Gradually add granulated sugar, beating well. Stir in water and vanilla.
- Combine Ingredients: Gradually fold in the dry ingredients until just blended. Pour the batter into the prepared pan and spread it evenly.
- Bake the Cake: Bake for 12-15 minutes, or until the cake springs back when lightly touched.
- Prepare the Towel: Lay a clean kitchen towel on a flat surface. Sprinkle the towel with a mix of granulated sugar and cinnamon for rolling.
- Roll the Cake: Once baked, immediately turn the cake onto the prepared towel. Carefully peel off the parchment paper. Roll the cake and towel together, starting at a short side. Allow it to cool completely.
- Make the Filling: In a bowl, beat cream cheese until smooth. Add in confectioners’ sugar, vanilla extract, and cinnamon, beating until creamy.
- Assemble the Cake: Unroll the cooled cake and spread the cream cheese filling over it. Re-roll the cake without the towel.
- Add Topping: Mix granulated sugar and cinnamon together. Sprinkle the mixture over the cake roll for added flavor.
- Chill: Wrap the roll in plastic wrap and refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- Room Temperature Ingredients: Ensure all ingredients are at room temperature to ensure a smooth batter and filling.
- Rolling Technique: Rolling the cake while it’s hot prevents it from cracking. Use the towel technique for ease.
- Serving Suggestion: This cake pairs well with a hot beverage, like coffee or tea, and can be dusted with extra confectioners’ sugar for extra sweetness.
