- 1 tablespoon warm water
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract

- ½ teaspoon baking powder
- ½ teaspoon salt
- Additional granulated sugar, for rolling
Instructions
- Preheat and prepare: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper for easy cleanup.
- Mix espresso base: In a small bowl, dissolve the espresso powder in warm water. Let it sit for a few minutes while you prepare the other ingredients.
- Cream butter and sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy. This usually takes 2–3 minutes and gives the cookies their soft, airy texture.
- Add egg and flavorings: Beat in the egg, vanilla extract, and the dissolved espresso mixture until everything is well combined.
- Whisk dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Combine wet and dry: Gradually add the dry mixture to the wet mixture, mixing on low speed until the dough comes together.
- Shape and roll: Scoop out tablespoon-sized portions of dough, roll them into balls, and then roll each ball in granulated sugar for that classic sugar cookie sparkle.
- Bake: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 8–10 minutes, or until the edges are just beginning to turn golden.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
