Description

Instructions

  1. Preheat and prepare: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper for easy cleanup.
  2. Mix espresso base: In a small bowl, dissolve the espresso powder in warm water. Let it sit for a few minutes while you prepare the other ingredients.
  3. Cream butter and sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy. This usually takes 2–3 minutes and gives the cookies their soft, airy texture.
  4. Add egg and flavorings: Beat in the egg, vanilla extract, and the dissolved espresso mixture until everything is well combined.
  5. Whisk dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  6. Combine wet and dry: Gradually add the dry mixture to the wet mixture, mixing on low speed until the dough comes together.
  7. Shape and roll: Scoop out tablespoon-sized portions of dough, roll them into balls, and then roll each ball in granulated sugar for that classic sugar cookie sparkle.
  8. Bake: Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 8–10 minutes, or until the edges are just beginning to turn golden.
  9. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
