Description

This delightful cranberry orange cake is a perfect blend of sweet and tart flavors.


Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 tablespoon orange zest
  • 2 cups fresh cranberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla extract and orange zest.
  4. Alternately add the flour mixture and milk to the wet ingredients, mixing until just combined.
  5. Gently fold in the cranberries. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
