Instructions
- Prepare Cream Cheese Filling:
In a medium bowl, mix the cream cheese and powdered sugar until smooth. Form into small balls (about 1 teaspoon each). Place on a baking sheet lined with parchment paper. Freeze for 30 minutes. - Make Cookie Dough:
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract. Add the pureed strawberries and mix well. In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until a dough forms. - Assemble Cookies:
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. Take about 2 tablespoons of dough and flatten it slightly in your palm. Place a frozen cream cheese ball in the center and wrap the dough around it, ensuring the cream cheese is fully enclosed. Place the dough balls on the prepared baking sheet. - Bake:
Bake the cookies for 12-15 minutes or until the edges are golden brown. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack. - Add Strawberry Glaze:
Melt the strawberry jam slightly in a microwave-safe bowl for a few seconds until runny. Drizzle over the cooled cookies.
