Description

A deliciously creamy flan with a rich caramel topping.


Ingredients

  • 1 cup granulated sugar (for caramel)
  • 4 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 tablespoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Caramel: In a medium saucepan over medium heat, melt the sugar, stirring constantly until it turns a golden brown. Be careful not to burn it. Quickly pour the caramel into the bottom of a flan mold or baking dish. Tilt the dish to coat the bottom evenly. Set aside.
  2. Prepare the Flan Custard: Preheat your oven to 350°F (175°C). In a large bowl, whisk the eggs gently to avoid too many bubbles. Add the sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt. Stir until well combined. Strain the mixture through a fine-mesh sieve to ensure a smooth custard.
  3. Assemble and Bake: Pour the custard over the set caramel in the mold. Place the flan mold into a larger baking dish and add hot water to the dish until it reaches halfway up the sides of the flan mold (creating a water bath). Carefully transfer to the preheated oven and bake for about 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
  4. Cool and Serve: Remove the flan from the water bath and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight. To unmold, run a knife around the edges and carefully invert onto a serving plate.

Notes

  • Ensure the caramel is evenly coated at the bottom to prevent sticking.
  • For a richer flavor, consider adding a splash of rum or coffee to the custard mixture.
  • Be cautious with the caramel as it can burn quickly and is very hot.
  • If bubbles form, gently tap the mold on the counter to release them before baking.
