- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 onion, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
- Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Prepare the Mushrooms and Onion: In the same skillet, add butter and let it melt. Add the onions and sauté until translucent, about 3-4 minutes. Add the mushrooms and cook until they are golden brown and have released their moisture, about 5 minutes.
- Make the Sauce: Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in the chicken broth, scraping any browned bits from the bottom of the skillet, and bring to a simmer. Reduce the heat and stir in the heavy cream and thyme. Let it simmer for 5 minutes until slightly thickened.
- Combine and Serve: Return the cooked chicken breasts to the skillet, spooning the sauce over the chicken. Let the chicken simmer in the sauce for an additional 5 minutes. Garnish with fresh parsley before serving.
Notes
- For additional flavor, add a splash of white wine to the sauce before adding the cream.
- If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce.
- Serve with mashed potatoes, pasta, or rice to soak up the delicious sauce.
