Ingredients

  • 1 lb steak (ribeye or sirloin)
  • 2 tablespoons olive oil

  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • 2 tablespoons tomato paste
  • for garnish fresh parsley
  • 2 tablespoons butter

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add rigatoni and cook until al dente according to package instructions. Drain and set aside.
  2. Grill the Steak: Season the steak with salt and pepper on both sides. Heat a grill pan over high heat and add a tablespoon of olive oil. Place the steak in the pan and cook for about 4 minutes on each side for medium-rare, or to your desired doneness. Remove from the pan, let it rest for 5 minutes, and then slice into strips.
  3. Prepare the Cream Sauce: In a large skillet, heat the remaining olive oil and butter over medium heat. Add minced garlic and sauté until fragrant. Stir in tomato paste and cook for another minute. Add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  4. Combine Pasta and Sauce: Add the cooked rigatoni to the skillet with the sauce. Toss to coat evenly.
  5. Serve: Plate the creamy rigatoni and top with sliced grilled steak. Garnish with chopped parsley and additional Parmesan if desired.
