- 12 oz fettuccine pasta
- 1 lb Italian sausage (sliced)
- 2 cups heavy cream
- 1 ½ cups grated Parmesan cheese
- 3 cloves garlic (minced)
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley (chopped, for garnish)
- ½ tsp red pepper flakes (optional)
Instructions
- Cook the Pasta: Boil a large pot of salted water. Cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set the pasta aside.
- Cook the Sausage: In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- Prepare the Sauce: In the same skillet, add butter and minced garlic. Sauté until fragrant (about 1 minute). Pour in the heavy cream and bring to a simmer. Gradually whisk in Parmesan cheese until melted and smooth. If the sauce is too thick, add reserved pasta water gradually until it reaches the desired consistency. Season with salt, pepper, and red pepper flakes if using.
- Combine: Add the cooked pasta and sausage to the sauce. Toss until the pasta is well coated in the creamy sauce.
- Serve: Garnish with chopped fresh parsley. Add extra grated Parmesan cheese if desired.

- For added flavor, consider using a mix of sweet and spicy Italian sausages.
- Ensure the cheese is fully melted into the sauce to prevent clumping.
- For a lighter version, substitute half of the cream with whole milk.
