- 2 cups fresh spinach (finely chopped)
- 1 cup feta cheese (crumbled)
- 1 egg (beaten, for egg wash)
- 1 tablespoon olive oil
- 1 garlic clove (minced)
- Salt and pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the Filling: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add chopped spinach to the skillet. Cook until wilted, then remove from heat. Allow the spinach to cool slightly. Mix in crumbled feta cheese, and season with salt and pepper.
- Prepare the Puff Pastry: Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into squares (approximately 4×4 inches).
- Assemble the Pastries: Place a spoonful of the spinach and feta mixture in the center of each pastry square. Fold the squares into triangles, pressing the edges to seal. Use a fork to crimp the edges if desired.
- Apply Egg Wash: Brush the top of each pastry with beaten egg using a pastry brush. This will give them a golden color.
- Bake: Place the pastries on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Garnish and Serve: Remove from the oven and let cool slightly. Sprinkle with chopped parsley before serving.
Notes
- Ensure the puff pastry is properly thawed to prevent it from cracking when folded.
- You can freeze these pastries before baking for future use; simply bake them directly from frozen, adding a few extra minutes to the baking time.
- For extra flavor, consider adding a pinch of nutmeg or lemon zest to the filling.
- Make sure to not overfill the pastries to prevent them from bursting open during baking.
