Description

This decadent red velvet cake layered with cream cheese frosting and crushed Oreo cookies is a delicious treat for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white distilled vinegar
  • 1 cup crushed Oreo cookies
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 10 whole Oreo cookies for decoration
  • Red frosting (store-bought or homemade)
  • Red velvet cake crumbs for garnish

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Dry Ingredients: In a large bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  3. Wet Ingredients: In another bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
  4. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, mixing until smooth. Fold in the crushed Oreo cookies.
  5. Bake the Cake: Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  6. Make the Frosting: In a large bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla, beating until creamy.
  7. Assemble the Cake: Place one cake layer on a serving plate. Spread a layer of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake. Use red frosting to create decorative swirls on top.
  8. Decorate: Arrange whole Oreo cookies around the top of the cake. Sprinkle red velvet cake crumbs and additional crushed Oreos for garnish.

Notes

  • For a richer chocolate flavor, add an extra teaspoon of cocoa powder to the batter.
