- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon unsalted butter
- 1/2 cup diced onion
- 1 jalapeño, seeded and finely chopped
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1/2 cup whole milk
- 1/4 teaspoon garlic powder
- Pinch of salt
Instructions
- In a medium saucepan over medium heat, melt the butter.
- Add the diced onion and jalapeño. Sauté for 2-3 minutes until softened.
- Stir in the diced tomatoes with green chilies and cook for 1 minute.
- Reduce heat to low and add the shredded cheddar and Monterey Jack cheese, stirring constantly.
- Season with garlic powder and salt.
- Serve the queso dip warm.
Notes
- For a spicier dip, leave the seeds in the jalapeño.
- This dip pairs well with tortilla chips or fresh vegetables.
