Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar

  • 1/2 cup white chocolate
  • 1/2 cup milk chocolate
  • 1/2 cup dark chocolate

Instructions

  1. Grease and flour shell-shaped madeleine molds.
  2. In a medium bowl, sift together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the eggs and sugar with an electric mixer on high speed until pale and thick (about 5 minutes). Add vanilla extract and lemon zest if using. Mix until combined.
  4. Gently fold the dry ingredients into the egg mixture in three additions, being careful not to deflate the mixture.
  5. Fold in the melted butter until just combined. The batter will be smooth and shiny.
  6. Cover the bowl and refrigerate the batter for at least 1 hour or overnight. This helps in forming the characteristic humps.
  7. Preheat the oven to 375°F (190°C).
  8. Spoon the batter into the prepared molds, filling them about 3/4 full.
  9. Bake for 10-12 minutes until the edges are golden and the centers spring back when touched.
  10. Remove from the oven and let cool in the molds for a few minutes, then transfer to a wire rack.
  11. Melt the white, milk, and dark chocolate separately in microwave-safe bowls or using a double boiler.
  12. Dip one side of each madeleine into the melted chocolate, alternating between white, milk, and dark chocolate.
  13. Place the dipped madeleines on parchment paper and let the chocolate set.
