Description
These delightful elegant shell-shaped chocolate madeleines are perfect for any occasion, combining the classic madeleine shape with a rich chocolate coating.
Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, melted and cooled
- Zest of 1 lemon (optional, for added flavor)
- 1/2 cup white chocolate
- 1/2 cup milk chocolate
- 1/2 cup dark chocolate
Instructions
- Grease and flour shell-shaped madeleine molds.
- In a medium bowl, sift together the flour, baking powder, and salt.
- In a separate large bowl, beat the eggs and sugar with an electric mixer on high speed until pale and thick (about 5 minutes). Add vanilla extract and lemon zest if using. Mix until combined.
- Gently fold the dry ingredients into the egg mixture in three additions, being careful not to deflate the mixture.
- Fold in the melted butter until just combined. The batter will be smooth and shiny.
- Cover the bowl and refrigerate the batter for at least 1 hour or overnight. This helps in forming the characteristic humps.
- Preheat the oven to 375°F (190°C).
- Spoon the batter into the prepared molds, filling them about 3/4 full.
- Bake for 10-12 minutes until the edges are golden and the centers spring back when touched.
- Remove from the oven and let cool in the molds for a few minutes, then transfer to a wire rack.
- Melt the white, milk, and dark chocolate separately in microwave-safe bowls or using a double boiler.
- Dip one side of each madeleine into the melted chocolate, alternating between white, milk, and dark chocolate.
- Place the dipped madeleines on parchment paper and let the chocolate set.
Notes
- Ensure the butter is cooled before mixing it into the batter to prevent it from cooking the eggs.
- Chilling the batter is crucial for achieving the traditional hump shape.
- Use a pastry brush to evenly coat the shell molds with butter and flour for easy removal.
- Experiment with flavor variations by adding almond extract or different citrus zests.
