Ingredients

  • 1.5 pounds baby potatoes (or small new potatoes)
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Prep the Potatoes: Wash and scrub the baby potatoes thoroughly. If they are large, cut them in half.
  2. Make the Honey Mustard Glaze: In a small bowl, mix honey, Dijon mustard, whole grain mustard, olive oil, soy sauce, and minced garlic until well combined.
  3. Cooking the Potatoes: In a large pot, bring water to a boil. Add the potatoes and cook until they are just fork-tender (about 10-12 minutes). Drain and set aside.
  4. Glaze the Potatoes: In a large skillet over medium heat, add the boiled potatoes and pour the honey mustard glaze over them. Toss the potatoes gently until they are evenly coated with the glaze.
  5. Simmer: Reduce heat to low and let the potatoes simmer in the glaze for about 5-7 minutes, or until the glaze has thickened slightly and sticks to the potatoes. Stir occasionally to prevent sticking.
  6. Season and Serve: Season the potatoes with salt and pepper to taste. Transfer to a serving dish and garnish with chopped green onions.

Notes

  • For added flavor, you can roast the potatoes in the oven at 400°F (200°C) for 20 minutes instead of boiling, then toss them in the glaze.
  • If you prefer a spicier kick, add a pinch of cayenne pepper to the glaze.
