Instructions

  1. Prepare Apples:
    • Wash and thoroughly dry the apples to remove any waxy coating.
    • Insert a lollipop stick firmly into each apple at the stem end.
  2. Set Up:
    • Line a baking sheet with parchment paper and lightly grease it to prevent sticking.
  3. Make Candy Coating:
    • In a small saucepan, combine the sugar, water, and corn syrup.
    • Stir over medium heat until the sugar is dissolved.
    • Increase the heat and bring the mixture to a boil without stirring.
    • Attach a candy thermometer to the pan and continue heating until the mixture reaches 300°F (hard crack stage).
  4. Color and Flavor:
    • Once the correct temperature is reached, remove the pan from heat.
    • Quickly stir in the blue food coloring and vanilla extract, if using.
  5. Coat the Apples:
    • Tilt the saucepan slightly and dip each apple into the candy mixture, turning it to coat evenly.
