Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach leaves
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano

Preheat your oven to 375°F (190°C).

In a bowl, combine spinach, feta cheese, sun-dried tomatoes, garlic, basil, and parsley. Mix well.

Carefully create a pocket in each chicken breast by slicing it horizontally without cutting all the way through. Season the outside and inside of the chicken breasts with salt, black pepper, lemon zest, and dried oregano.

Fill each pocket with the prepared stuffing mixture, securing with toothpicks if necessary.

Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.

Transfer seared chicken breasts to a baking dish. Place in the preheated oven and roast for 20-25 minutes or until fully cooked (internal temperature should reach 165°F or 74°C).

Allow the chicken to rest for a few minutes before removing the toothpicks. Slice and serve warm.
