Delicious fritters made with roasted butternut squash, perfect as a snack or side dish.

- 2 cups butternut squash, peeled and cubed
- 1 cup all-purpose flour (or gluten-free flour)
- 2 large eggs
- 4 green onions, chopped
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- 4 tbsp olive oil (for frying)
Instructions
- Preheat your oven to 400°F (200°C). Roast the cubed butternut squash on a baking sheet drizzled with olive oil for about 25 minutes until tender.
- Once cooled, mash the roasted squash in a mixing bowl until smooth.
- Stir in flour, eggs, green onions, garlic powder, salt, and pepper until well combined.
- In a skillet over medium heat, add olive oil until shimmering.
- Scoop out small amounts of batter and form patties.
- Fry each fritter for about 3 minutes on each side until golden brown.
- Drain on paper towels before serving.
Notes
- For a gluten-free option, use gluten-free flour.
- These fritters can be served warm or at room temperature.
