Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 1 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs
  • 4 green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 4 tbsp olive oil (for frying)

Instructions

  1. Preheat your oven to 400°F (200°C). Roast the cubed butternut squash on a baking sheet drizzled with olive oil for about 25 minutes until tender.
  2. Once cooled, mash the roasted squash in a mixing bowl until smooth.
  3. Stir in flour, eggs, green onions, garlic powder, salt, and pepper until well combined.
  4. In a skillet over medium heat, add olive oil until shimmering.
  5. Scoop out small amounts of batter and form patties.
  6. Fry each fritter for about 3 minutes on each side until golden brown.
  7. Drain on paper towels before serving.
