- 1 lb lean ground beef
- 8 oz elbow macaroni
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes (fire-roasted preferred)
- 1 cup shredded sharp cheddar cheese
- 1 cup milk
- Salt, pepper, paprika, and Italian herbs to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Boil water in a large pot and cook the elbow macaroni until al dente; drain and set aside.
- In a large skillet over medium heat, brown the ground beef with the diced onion until fully cooked; add minced garlic and diced tomatoes and simmer for 5 minutes.
- In a bowl, whisk together milk and cheddar cheese until smooth.
- Combine the cooked pasta with the beef mixture and pour in the cheese sauce; mix until evenly coated.
- Transfer to a greased baking dish, top with extra cheese if desired, and bake for about 25 minutes until bubbly and golden brown.
Notes
- This dish pairs well with a fresh salad.
- For a spicier version, add some chili flakes to the beef mixture.
- Can be prepared ahead of time and refrigerated before baking.
