- 2 pints strawberry ice cream, softened
- 2 pints vanilla ice cream, softened
- 1 pound cake or sponge cake, sliced thinly
- 1 cup freeze-dried strawberries, crushed
- 1 cup chocolate ganache or melted chocolate
- Whipped cream for topping
Instructions
- Prepare the Cake Base:
- Line a loaf pan with plastic wrap, leaving extra at the sides to help remove the cake later.
- Place a layer of sliced pound cake at the bottom of the pan.
- Layer the Ice Cream:
- Spread half of the softened strawberry ice cream over the pound cake layer. Smooth it out with a spatula.
- Add another layer of pound cake slices.
- Spread a layer of vanilla ice cream over the cake.
- Repeat with another layer of pound cake and the remaining strawberry ice cream.
- Freeze the Cake:
- Wrap the top of the cake with plastic wrap and freeze for at least 4 hours or until firm.
- Decorate:
- Remove the cake from the pan using the plastic wrap overhang.
- Drizzle chocolate ganache or melted chocolate over the top.
- Sprinkle with crushed freeze-dried strawberries.
- Add whipped cream for additional decoration if desired.
- Serve:
- Slice and serve immediately.

- For easier slicing, dip the knife in hot water before cutting the cake.
