Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
- Prepare the Batter: In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the flour mixture to the wet ingredients alternately with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Bake the Cakes: Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Prepare the Cream Filling: In a chilled bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.
- Assemble the Cake: Once the cakes are completely cool, place one layer on a serving plate and spread a layer of whipped cream over it. If desired, add a layer of sliced fruits or jam. Repeat with the second layer. Top with the final layer, spreading the cream over the top and sides of the cake.
- Finishing Touches: Smooth the outer layer of whipped cream and decorate with any additional toppings like fruits or sprinkles if desired.
