Ingredients

- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 1 teaspoon chopped fresh rosemary (or 1/2 tsp dried)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Drain and rinse chickpeas well, then pat them completely dry using a kitchen towel or paper towels.
- In a mixing bowl, toss the chickpeas with olive oil, lemon zest, rosemary, thyme, garlic powder, salt, and black pepper. Mix until evenly coated.
- Spread chickpeas in a single layer on a parchment-lined baking sheet without overcrowding.
- Roast for 25-30 minutes, shaking the pan halfway through. Chickpeas should be golden brown and crisp.
- Remove from oven and let cool for 10 minutes to firm up their crunch.
- Serve immediately or store in an airtight container at room temperature for up to 5 days.
Notes
- For an extra kick, add some cayenne pepper.
