Description

A delicious and healthy snack made from roasted chickpeas, seasoned to perfection.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest
  • 1 teaspoon chopped fresh rosemary (or 1/2 tsp dried)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Drain and rinse chickpeas well, then pat them completely dry using a kitchen towel or paper towels.
  2. In a mixing bowl, toss the chickpeas with olive oil, lemon zest, rosemary, thyme, garlic powder, salt, and black pepper. Mix until evenly coated.
  3. Spread chickpeas in a single layer on a parchment-lined baking sheet without overcrowding.
  4. Roast for 25-30 minutes, shaking the pan halfway through. Chickpeas should be golden brown and crisp.
  5. Remove from oven and let cool for 10 minutes to firm up their crunch.
  6. Serve immediately or store in an airtight container at room temperature for up to 5 days.
