Description
Delicious mango crepes filled with whipped cream and fresh mango puree.
Ingredients

- 1 cup all-purpose flour
- 2 eggs (large)
- 1 cup milk
- 2 tbsp granulated sugar
- 2 tbsp unsalted butter (melted)
- 1 tsp vanilla extract
- 1 pinch salt
- 1 cup ripe mango (pureed or finely diced)
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
Instructions
- Whisk flour, sugar, and salt in a bowl.
- Add eggs and mix until thick.
- Gradually whisk in milk, then butter and vanilla.
- Rest batter 20 minutes.
- Cook thin crepes in a non-stick pan until lightly golden.
- Whip cream with sugar and vanilla.
- Fold mango into whipped cream.
- Fill and fold crepes into pillows and serve.
Notes
- For extra flavor, add more vanilla extract to the whipped cream.
- Serve with additional mango slices on top.
