- 8 ounces pasta (fettuccine or penne)
- 2 chicken breasts (sliced)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup Parmesan cheese (grated)
- Salt and pepper to taste
- Fresh parsley (chopped, for garnish)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 5-7 minutes. Remove and set aside.
- Add minced garlic to the same pan and sauté for 1 minute until fragrant.
- Pour in the chicken broth to deglaze, scraping the skillet to lift any browned bits, and bring to a gentle simmer.
- Stir in the heavy cream and gradually add the Parmesan cheese, stirring until melted and the sauce is smooth.
- Return the cooked pasta and seared chicken to the skillet, tossing everything together. If the sauce is too thick, add reserved pasta water until desired consistency is reached.
- Serve hot, garnished with chopped fresh parsley.
Notes
- For a richer flavor, consider adding more cheese or a splash of white wine while cooking.
- Store leftovers in an airtight container in the fridge for up to 3 days.
