Ingredients

  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 200ml heavy cream
  • 1 tbsp lemon juice
  • 50g chopped chocolate or cocoa nibs (optional)
  • Whole biscuits for topping (optional)

Instructions

  1. Prepare the Biscuit Base: Crush the digestive biscuits until fine. You can use a food processor or place them in a sealed bag and crush with a rolling pin. Mix the crushed biscuits with melted butter until well combined. Press the mixture evenly into the bottom of a 20×20 cm (8×8 inch) square pan lined with parchment paper. Chill in the refrigerator for 15 minutes.
  2. Prepare the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and lemon juice, then mix until well combined. In a separate bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cream cheese mixture until smooth and well incorporated. If using, fold in the chopped chocolate or cocoa nibs.
  3. Assemble the Cheesecake Bars: Spread the cheesecake filling evenly over the chilled biscuit crust. Smooth the top with a spatula and place whole biscuits on top for decoration if desired. Chill in the refrigerator for at least 4 hours, or until fully set.
  4. Serve: Once set, lift the cheesecake using the parchment paper and cut into bars. Serve chilled.
