Instructions
- Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs and sugar. Add melted butter and mix until combined. Press mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
- Make the Filling: In a large mixing bowl, beat cream cheese until smooth. Add sugar and vanilla, beating until fully combined. Add eggs one at a time, mixing well after each addition. Blend in sour cream and flour until smooth. Pour the filling over the cooled crust.
- Bake the Cheesecake: Bake for 55-60 minutes or until the center is set. Turn off oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Remove from oven and refrigerate for at least 4 hours or overnight.
- Prepare the Ocean Topping: Whip the heavy cream and sugar until soft peaks form. Add a few drops of blue gel food coloring, gently swirling to create an ocean effect. Spread the whipped cream topping over the chilled cheesecake.
- Garnish and Serve: Garnish with white chocolate shards to resemble ocean waves. Optionally, sprinkle a pinch of sea salt for a hint of sea flavor. Serve chilled.
