Description

Delicious chocolate mint cookies that are soft and chewy with a rich flavor from cocoa and a hint of peppermint.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp espresso powder
  • 1/2 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp peppermint extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, espresso powder, and baking soda.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Beat in eggs one at a time followed by vanilla and peppermint extracts.
  4. Gradually mix dry ingredients into the wet mixture until just combined. Fold in chocolate chips.
  5. Scoop tablespoon-sized balls onto prepared sheets. Bake for about 10 minutes until edges are firm but centers are soft. Let cool on wire racks before serving.
