Description

A delicious and refreshing frozen treat made with Greek yogurt, pineapple, and coconut.


Ingredients

  • 2 cups vanilla Greek yogurt
  • 2 tbsp honey (or maple syrup)
  • ½ tsp vanilla extract
  • 1 cup diced pineapple (fresh)
  • ¼ cup shredded coconut (toasted preferred)

Instructions

  1. Stir Greek yogurt, honey (or maple), and vanilla until smooth and creamy.
  2. Line a baking sheet with parchment.
  3. Spread the yogurt mixture into a thin, even layer (about ½ inch).
  4. Scatter pineapple evenly over the yogurt.
  5. Sprinkle coconut (and nuts if using).
  6. Freeze 3–4 hours, or until completely solid.
  7. Break into bark pieces.
  8. Enjoy immediately or store frozen.
