- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 3 large eggs
- 1 ½ cups chocolate wafer cookies, crushed
- 1/3 cup unsalted butter, melted
- 2 cups fresh or frozen cherries
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch mixed with 1 tablespoon water
- Fresh cherries for garnish
Instructions
- Prepare the Crust: Preheat oven to 350°F (175°C). Mix crushed chocolate cookies with melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and then let it cool.
- Make the Cherry Sauce: In a saucepan, combine cherries, sugar, and lemon juice over medium heat. Cook until the cherries release their juices and the mixture bubbles. Add the cornstarch slurry and stir until thickened. Remove from heat and let it cool.
- Prepare the Cheesecake Filling: In a large bowl, beat the cream cheese with sugar until smooth and creamy. Add sour cream and vanilla, mixing well. Add the eggs one at a time, mixing on low speed until combined.
- Assemble the Cheesecake: Pour half of the cheesecake batter over the crust. Spoon half of the cherry sauce over the batter, swirling gently. Repeat with the remaining batter and cherry sauce. Smooth the top with a spatula.
- Bake: Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly wobbly. Turn off the oven and let the cheesecake cool inside for 1 hour. Refrigerate for at least 4 hours, or overnight for best results.
- Serve: Remove from the springform pan. Garnish with fresh cherries before serving.
