Description

A delicious rich chocolate-topped cheesecake slice with a creamy filling and a graham cracker crust.

Ingredients

Scale
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 tablespoons granulated sugar

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (160°C). In a bowl, mix the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a springform pan to form an even layer.
  2. Make the Cheesecake Layer: In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar, beating until combined. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Pour the cheesecake mixture over the prepared crust.
  3. Bake and Cool: Bake in the preheated oven for about 45-50 minutes, or until the center is set. Remove from the oven and allow to cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
  4. Prepare the Chocolate Ganache Topping: In a saucepan, heat the heavy cream until it starts to simmer. Remove from heat and add the chopped dark chocolate. Let it sit for 2 minutes, then stir until smooth and glossy.
  5. Assemble the Cheesecake: Pour the chocolate ganache over the chilled cheesecake. Spread evenly over the top and let it set for a few minutes.

Notes

  • Ensure cream cheese is at room temperature for a smoother cheesecake batter.
  • Use a water bath while baking the cheesecake to prevent cracking.
  • Allow the ganache to cool slightly before pouring over the cheesecake to prevent it from melting the top layer.
