Description
Delicious grilled salmon tacos topped with a refreshing pineapple avocado salsa, perfect for a summer meal.

- 1 pound fresh salmon fillet
- 8 small corn or flour tortillas
- 1 cup diced pineapple
- 1 ripe avocado, diced
- ½ medium red onion, finely chopped
- 1 jalapeño, deseeded and minced
- ½ cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper, to taste
- Olive oil, for grilling
Instructions
- Rinse the salmon fillet under cold water and pat it dry with paper towels. Season both sides with salt, pepper, and a drizzle of olive oil.
- Preheat your grill or grilling pan over medium-high heat.
- Place the seasoned salmon on the grill. Cook for about 5–7 minutes per side or until the salmon is cooked through and flakes easily with a fork.
- While the salmon is grilling, combine diced pineapple, avocado, red onion, jalapeño, and fresh cilantro in a mixing bowl. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Mix gently, being careful not to mash the avocado.
- Lightly grill the tortillas for about 30 seconds on each side until warm and pliable.
- Once the salmon is cooked, take it off the grill and let it rest for a couple of minutes. Flake the salmon into bite-sized pieces.
- Place a portion of salmon on each tortilla and top with pineapple avocado salsa.
- Serve immediately with lime wedges on the side for an extra zesty kick.
Notes
- This recipe works great with both corn and flour tortillas.
- Feel free to adjust the spice level by adding more or less jalapeño.
