Description

Delicious grilled salmon tacos topped with a refreshing pineapple avocado salsa, perfect for a summer meal.


Ingredients

  • 1 pound fresh salmon fillet
  • 8 small corn or flour tortillas
  • 1 cup diced pineapple
  • 1 ripe avocado, diced
  • ½ medium red onion, finely chopped
  • 1 jalapeño, deseeded and minced
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper, to taste
  • Olive oil, for grilling

Instructions

  1. Rinse the salmon fillet under cold water and pat it dry with paper towels. Season both sides with salt, pepper, and a drizzle of olive oil.
  2. Preheat your grill or grilling pan over medium-high heat.
  3. Place the seasoned salmon on the grill. Cook for about 5–7 minutes per side or until the salmon is cooked through and flakes easily with a fork.
  4. While the salmon is grilling, combine diced pineapple, avocado, red onion, jalapeño, and fresh cilantro in a mixing bowl. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Mix gently, being careful not to mash the avocado.
  5. Lightly grill the tortillas for about 30 seconds on each side until warm and pliable.
  6. Once the salmon is cooked, take it off the grill and let it rest for a couple of minutes. Flake the salmon into bite-sized pieces.
  7. Place a portion of salmon on each tortilla and top with pineapple avocado salsa.
  8. Serve immediately with lime wedges on the side for an extra zesty kick.

Notes

  • This recipe works great with both corn and flour tortillas.
  • Feel free to adjust the spice level by adding more or less jalapeño.
