- 4 boneless skinless chicken breasts
- 2 cups fresh spinach (finely chopped)
- 1 cup feta cheese (crumbled)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 teaspoon paprika
- 1 teaspoon onion powder
- ½ teaspoon chili flakes (optional)
- Toothpicks or cooking twine
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling: Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant. Add the chopped spinach and sauté until wilted. Remove from heat and mix in the feta cheese. Season with a pinch of salt and pepper.
- Prepare the Chicken: Slice a pocket into each chicken breast, being careful not to cut all the way through. Season each breast inside and out with salt, black pepper, paprika, and onion powder.
- Stuff the Chicken: Fill each chicken breast pocket with the spinach and feta mixture. Secure the openings with toothpicks or cooking twine to prevent the filling from spilling out.
- Cook the Chicken: Place the stuffed chicken breasts in a baking dish and brush with a little olive oil. Sprinkle with additional paprika for color, if desired. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
Notes
- Make sure not to overfill the chicken breasts to avoid bursting during cooking.
- For a cheesy twist, consider adding shredded mozzarella to the filling.
- Allow the chicken to rest for a few minutes before serving to let the juices redistribute for moist, tender bites.
