Ingredients

  • 4 boneless skinless chicken breasts
  • 2 cups fresh spinach (finely chopped)
  • 1 cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • ½ teaspoon chili flakes (optional)
  • Toothpicks or cooking twine

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Filling: Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant. Add the chopped spinach and sauté until wilted. Remove from heat and mix in the feta cheese. Season with a pinch of salt and pepper.
  3. Prepare the Chicken: Slice a pocket into each chicken breast, being careful not to cut all the way through. Season each breast inside and out with salt, black pepper, paprika, and onion powder.
  4. Stuff the Chicken: Fill each chicken breast pocket with the spinach and feta mixture. Secure the openings with toothpicks or cooking twine to prevent the filling from spilling out.
  5. Cook the Chicken: Place the stuffed chicken breasts in a baking dish and brush with a little olive oil. Sprinkle with additional paprika for color, if desired. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
