- 4 cups all-purpose flour
- 1 tablespoon active dry yeast
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 ¼ cups warm water
- 3 tablespoons olive oil
- 500g ground beef or lamb
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 large tomato, diced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 egg (for egg wash)
- Fresh parsley, chopped (for garnish)
- Sliced red onion (for garnish)
- Sliced fresh tomatoes (for garnish)
Instructions
- Prepare the Dough: In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. Add the flour, salt, and olive oil to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until it’s smooth and elastic. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise for about 1 hour or until it doubles in size.
- Prepare the Filling: In a skillet, heat some olive oil over medium heat. Add onions and garlic, and sauté until soft. Add the ground meat, breaking it apart as it cooks. Cook until browned. Stir in the tomato, tomato paste, paprika, cumin, salt, and pepper. Cook for a few more minutes until the mixture is aromatic and thickened. Let it cool.
- Assemble the Pide: Preheat the oven to 220°C (428°F). Divide the dough into equal portions. Roll each one into an oval shape on a floured surface. Spread the meat filling over each piece of dough, leaving some space at the edges. Fold over the edges to form a boat shape, pinching the ends to seal them. Beat the egg and brush the edges of the dough with it for a golden finish.
- Bake: Place the pide on a parchment-lined baking sheet. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown and cooked through.
- Garnish and Serve: Garnish with fresh parsley, slices of red onion, and tomato. Serve warm.

- Ensure the water for the yeast is warm, not hot, to activate the yeast properly.
- You can experiment with different fillings, such as spinach and feta for a vegetarian option.
- Adjust the spices to your taste preference for a more personalized flavor.
