Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the cumin seeds, coriander powder, turmeric powder, and red chili powder, stirring to combine.
- Pour in the vegetable broth and bring to a boil. Add the green peas and reduce heat to simmer.
- Let the stew simmer for about 20 minutes, then stir in the coconut milk and cook for an additional 5 minutes.
- Ladle the stew into serving bowls and top each with a dollop of plain yogurt and a sprinkle of fresh cilantro.
