  • 1 teaspoon red chili powder (adjust to taste)
  • 4 cups vegetable broth
  • 1 cup coconut milk (for creaminess)
  • 1 cup plain yogurt (for serving)
  • 2 tablespoons fresh cilantro (chopped, for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add the cumin seeds, coriander powder, turmeric powder, and red chili powder, stirring to combine.
  4. Pour in the vegetable broth and bring to a boil. Add the green peas and reduce heat to simmer.
  5. Let the stew simmer for about 20 minutes, then stir in the coconut milk and cook for an additional 5 minutes.
  6. Ladle the stew into serving bowls and top each with a dollop of plain yogurt and a sprinkle of fresh cilantro.
