Description

Delicious cookies filled with melted hard candies, perfect for any occasion!


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 24 assorted hard candies (such as Jolly Ranchers or Life Savers), crushed

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract until well combined.
  4. Whisk together flour, baking powder, and salt in a separate bowl, then gradually mix into the butter mixture until a dough forms.
  5. Roll out the dough to about 1/4-inch thickness. Cut out shapes with cookie cutters, then cut out smaller shapes from the centers. Transfer cookies to prepared baking sheets.
  6. Fill the center cutouts with crushed hard candies.
  7. Bake for 8-10 minutes or until the edges are lightly golden and the candy centers have melted.
  8. Cool cookies completely on the baking sheets before removing to allow the candy centers to set.
