  • 1 pre-made pie crust (top and bottom) or homemade pie crust
  • 1 egg (for egg wash, beaten with 1 tablespoon of water)

Instructions

  1. Preheat Oven: Begin by preheating your oven to 400°F (200°C).
  2. Prepare the Cherry Filling: In a large mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix until the cherries are well coated.
  3. Assemble the Pie: Roll out your pie crust and place it into a 9-inch pie pan. Ensure the crust is pressed gently to fit the pan. Pour the cherry mixture into the prepared pie crust. Dot the cherry mixture with butter pieces.
  4. Add the Top Crust: Roll out the top crust. You can either cover the pie completely or cut strips to make a lattice top. If using a full cover, make a few slits for ventilation. For a lattice: Weave strips over the cherries, alternating over and under.
  5. Seal and Finish: Trim any overhanging crust edges, then crimp to seal the edges. Brush the top of the pie with the egg wash for a beautiful golden finish.
  6. Bake: Place the pie in the preheated oven. Bake for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Keep an eye on the crust; if it starts to brown too quickly, cover the edges with foil.
  7. Cool: Allow the pie to cool for at least 2 hours before serving. This helps the filling set and makes slicing easier.

Notes

  • For the best flavor, use fresh, ripe cherries. If they aren’t available, frozen cherries can be a good substitute.
