- 1 cup granulated sugar
- 3 tablespoons cornstarch

- 1 pre-made pie crust (top and bottom) or homemade pie crust
- 1 egg (for egg wash, beaten with 1 tablespoon of water)
Instructions
- Preheat Oven: Begin by preheating your oven to 400°F (200°C).
- Prepare the Cherry Filling: In a large mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix until the cherries are well coated.
- Assemble the Pie: Roll out your pie crust and place it into a 9-inch pie pan. Ensure the crust is pressed gently to fit the pan. Pour the cherry mixture into the prepared pie crust. Dot the cherry mixture with butter pieces.
- Add the Top Crust: Roll out the top crust. You can either cover the pie completely or cut strips to make a lattice top. If using a full cover, make a few slits for ventilation. For a lattice: Weave strips over the cherries, alternating over and under.
- Seal and Finish: Trim any overhanging crust edges, then crimp to seal the edges. Brush the top of the pie with the egg wash for a beautiful golden finish.
- Bake: Place the pie in the preheated oven. Bake for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Keep an eye on the crust; if it starts to brown too quickly, cover the edges with foil.
- Cool: Allow the pie to cool for at least 2 hours before serving. This helps the filling set and makes slicing easier.
Notes
- For the best flavor, use fresh, ripe cherries. If they aren’t available, frozen cherries can be a good substitute.
- Adjust the sugar quantity according to the sweetness of your cherries.
