Delicious stuffed bell peppers filled with ground beef, beans, and cheese.

- 4 large bell peppers (any color)
- 1 lb lean ground beef or turkey
- 1 oz taco seasoning (1 packet)
- 1 cup black beans (canned, drained)
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or Mexican blend)
- Sour cream for topping (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess grease.
- Stir in taco seasoning, black beans, and cooked rice; simmer for about 5 minutes.
- Generously fill each pepper with the meat mixture and place upright in a baking dish.
- Top each pepper with shredded cheese and cover with foil.
- Bake for 30 minutes until peppers are tender and cheese is melted.
Notes
- Adjust the spice level by using different taco seasoning.
- Substitute with ground chicken or a meat substitute for a different flavor.
