Description

Delicious stuffed bell peppers filled with ground beef, beans, and cheese.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb lean ground beef or turkey
  • 1 oz taco seasoning (1 packet)
  • 1 cup black beans (canned, drained)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess grease.
  4. Stir in taco seasoning, black beans, and cooked rice; simmer for about 5 minutes.
  5. Generously fill each pepper with the meat mixture and place upright in a baking dish.
  6. Top each pepper with shredded cheese and cover with foil.
  7. Bake for 30 minutes until peppers are tender and cheese is melted.
