A delightful winter fruit salad featuring vibrant citrus fruits, pomegranate arils, and a light lemon dressing.


Ingredients

  • 2 oranges, peeled and sliced
  • 1 grapefruit, peeled and sliced
  • 1 cup pomegranate arils
  • 2 kiwis, peeled and sliced
  • 1 apple, thinly sliced
  • 1 tablespoon fresh lemon juice
  • 12 tablespoons honey or maple syrup
  • 1 teaspoon orange zest
  • Fresh mint leaves, finely chopped (optional)

Instructions

  1. Start by preparing all your fruit. Peel the oranges and grapefruit carefully, removing as much of the white pith as possible. Slice them into rounds or segments, whichever you prefer.
  2. Add the citrus slices to a large serving bowl. Sprinkle in the pomegranate arils, letting them tumble over the fruit like little rubies. Add the kiwi and apple slices, arranging everything gently so the fruit stays intact and visually appealing.
  3. In a small bowl, whisk together the lemon juice, honey or maple syrup, and orange zest. This light dressing enhances the natural sweetness without overpowering the fruit.
  4. Drizzle the dressing over the fruit and gently toss just until combined. Finish with fresh mint if using. Let the salad rest for 5–10 minutes before serving so the flavors can mingle.
