- 3 tbsp olive oil
- 1/4 cup juice of 2 lemons
- 1 zest of 1 lemon
- 4 cloves garlic, minced
- 2 tsp freshly cracked black pepper
- 1/4 cup low-sodium soy sauce
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- In a bowl, mix lemon zest, lemon juice, minced garlic, olive oil, and black pepper.
- Coat the chicken breasts in the lemon mixture and place them in the baking dish.
- Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Meanwhile, whisk together any leftover marinade with soy sauce to create a sauce.
- Serve the chicken hot, drizzled with the sauce, alongside rice or veggies.
