Description
Delicious and nutritious cottage cheese pancakes made with oats and eggs.
Ingredients

- 1/2 cup rolled oats
- 1/2 cup cottage cheese
- 2 large eggs
- 1 tablespoon sugar (optional)
Instructions
- Add the oats, cottage cheese, eggs, and sugar to a high-speed blender or food processor and blend until smooth.
- Preheat a hot skillet or pan over medium heat. Once hot, add some oil.
- Drop 1/8-cup portions of pancake batter and cover the pan. Cook the pancakes for two minutes, flip, and cook for another minute.
- Repeat the process until all the pancakes are cooked up.
- Serve the pancakes immediately.
Notes
- These pancakes can be served with syrup, fruit, or yogurt.
- Feel free to adjust the sweetness by adding more or less sugar.
