Description
Delicious brown butter chocolate chip cookies that are thick and chewy with a rich flavor.
Ingredients

- 1 cup (16 Tbsp; 226g) unsalted butter
- 1/2 cup (100g) granulated sugar
- 1 cup (200g) packed light or dark brown sugar
- 1 large egg + 1 egg yolk, at room temperature
- 2 teaspoons pure vanilla extract
- 2 and 1/2 cups (313g) all-purpose flour (spooned & leveled)
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 Tablespoons (30ml) milk, at room temperature
- 1 and 1/2 cups (270g) semi-sweet chocolate chips
- optional: flaky sea salt, for topping
Instructions
- Slice the butter into pieces and place in a light-colored skillet. Melt the butter over medium heat and stir or whisk constantly. Cook until it is golden in color, then remove from heat and pour into a heatproof bowl.
- Let cool for 10 minutes, then chill until solid, about 90 minutes.
- Remove the solidified brown butter and beat in a large bowl on high speed until smooth and creamy.
- Add the brown sugar and granulated sugar, beating until lightened and combined, about 2 minutes. Add the egg, egg yolk, and vanilla extract; beat until combined.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Add to the butter mixture and mix on low speed until just combined. Drizzle in the milk and mix until incorporated.
- Add the chocolate chips and mix until evenly distributed.
- Scoop and roll the dough into balls, each about 2 Tablespoons or 45g. Refrigerate for at least 2 hours or up to 3 days.
- Preheat oven to 375°F (191°C). Line baking sheets with parchment paper.
- Arrange 8 dough balls per baking sheet, spacing them about 3 inches apart. Sprinkle with sea salt, if using.
- Bake for 12–14 minutes, until lightly golden. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Store in an airtight container at room temperature for up to 5 days.
Notes
- The cookie dough can be made ahead and refrigerated for up to 3 days.
- Press extra chocolate chips into the tops for a more appealing look before baking.
