Description

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 jalapeno, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can diced tomatoes
  • 1 can black beans, rinsed
  • 1 cup corn
  • Salt to taste
  • 1 lime, juiced
  • Fresh cilantro for garnish
  • Tortilla strips for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, bell pepper, and jalapeno. Cook until softened.
  3. Stir in cumin and chili powder, cooking for another minute.
  4. Add chicken broth, cooked chicken, diced tomatoes, black beans, and corn.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add lime juice and salt to taste.
  7. Serve hot, garnished with cilantro and tortilla strips.

Notes
