Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 jalapeno, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 can diced tomatoes
- 1 can black beans, rinsed
- 1 cup corn
- Salt to taste
- 1 lime, juiced
- Fresh cilantro for garnish
- Tortilla strips for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, bell pepper, and jalapeno. Cook until softened.
- Stir in cumin and chili powder, cooking for another minute.
- Add chicken broth, cooked chicken, diced tomatoes, black beans, and corn.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add lime juice and salt to taste.
- Serve hot, garnished with cilantro and tortilla strips.
Notes
- For extra spice, use additional jalapeno or add hot sauce.
- Can be served with rice for a heartier meal.
