  • lemon juice, to taste
  • chili flakes (optional)
  • vinegar (optional, for poaching)

Instructions

  1. Bring a small pot with water, about 2 to 3 inches deep, to a gentle simmer.
  2. Add a small splash of vinegar if desired to help the egg whites set.
  3. Crack the egg into a small bowl for easy sliding into the water.
  4. Stir the water gently to create a soft swirl, then slide the egg into the center.
  5. Cook for 3 to 4 minutes for a runny yolk, adding an extra minute for a firmer texture.
  6. Remove the poached egg with a slotted spoon and dab the bottom on a paper towel to remove excess water.
  7. Season the avocado with salt, pepper, and lemon juice, then spread it on the toasted bread.
  8. Top with the poached egg and season again with salt and pepper, plus chili flakes if desired.
