- 1 to 1 pound Thinly Sliced Roast Beef
- 4–6 Large Flour Tortillas (10–12 inch)
- 6–8 ounces Provolone Cheese (sliced)
- 6–8 ounces Cream Cheese (softened)
- 2–3 tablespoons Mayonnaise
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1/4 teaspoon Salt
- Black Pepper (to taste)
- Caramelized Onions (optional)
- Au Jus Mix or High-Quality Beef Broth
- Horseradish Sauce (optional)
- Seasonings: Garlic Powder, Onion Powder, Salt, Black Pepper
Instructions
- Prepare Your Au Jus: If using a powdered mix, follow the package instructions to prepare it. If using beef broth, pour it into a small saucepan, add any desired seasonings like a bay leaf or a dash of Worcestershire sauce, and bring it to a gentle simmer. Let it simmer for about 15-20 minutes.
- Caramelize the Onions (If Using): Thinly slice one large yellow onion. In a skillet over medium-low heat, melt a tablespoon of butter or olive oil. Add the onions and cook slowly, stirring occasionally, for 25-40 minutes until they are deeply golden brown and very tender. Season with a pinch of salt.
- Prepare the Cream Cheese Spread: In a small bowl, combine softened cream cheese with mayonnaise. Add garlic powder, onion powder, salt, and black pepper. Mix thoroughly until smooth and well combined.
- Assemble the Tortillas: Lay a large flour tortilla flat on a clean work surface. Spread a thin, even layer of your cream cheese mixture over the entire surface of the tortilla.
- Layer the Fillings: Place 2-3 slices of provolone cheese over the cream cheese layer. Evenly distribute about 4-6 slices of thinly sliced roast beef over the cheese. If using, sprinkle a generous portion of the cooled caramelized onions over the roast beef.
- Roll ‘Em Up: Starting from one edge, tightly roll the tortilla all the way across. Once rolled, wrap the log tightly in plastic wrap.
- Chill and Slice: Place the roll-ups in the refrigerator for at least 30 minutes. Once chilled, unwrap each log and use a sharp knife to slice them into 1-inch thick pinwheels.
- Serve: Arrange the French Dip Tortilla Roll Ups on a platter. Serve immediately with individual small bowls of warm au jus for dipping.
