  • 46 Large Flour Tortillas (1012 inch)
  • 68 ounces Provolone Cheese (sliced)
  • 68 ounces Cream Cheese (softened)
  • 23 tablespoons Mayonnaise
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/4 teaspoon Salt
  • Black Pepper (to taste)
  • Caramelized Onions (optional)
  • Au Jus Mix or High-Quality Beef Broth
  • Horseradish Sauce (optional)
  • Seasonings: Garlic Powder, Onion Powder, Salt, Black Pepper

Instructions

  1. Prepare Your Au Jus: If using a powdered mix, follow the package instructions to prepare it. If using beef broth, pour it into a small saucepan, add any desired seasonings like a bay leaf or a dash of Worcestershire sauce, and bring it to a gentle simmer. Let it simmer for about 15-20 minutes.
  2. Caramelize the Onions (If Using): Thinly slice one large yellow onion. In a skillet over medium-low heat, melt a tablespoon of butter or olive oil. Add the onions and cook slowly, stirring occasionally, for 25-40 minutes until they are deeply golden brown and very tender. Season with a pinch of salt.
  3. Prepare the Cream Cheese Spread: In a small bowl, combine softened cream cheese with mayonnaise. Add garlic powder, onion powder, salt, and black pepper. Mix thoroughly until smooth and well combined.
  4. Assemble the Tortillas: Lay a large flour tortilla flat on a clean work surface. Spread a thin, even layer of your cream cheese mixture over the entire surface of the tortilla.
  5. Layer the Fillings: Place 2-3 slices of provolone cheese over the cream cheese layer. Evenly distribute about 4-6 slices of thinly sliced roast beef over the cheese. If using, sprinkle a generous portion of the cooled caramelized onions over the roast beef.
